Lamb Chop Pairing
Planning a dinner for this weekend consisting of a few racks of lamb chops cooked via sous vide with a side of roasted potatoes and a vegetable that I have yet to decide. The lamb will be seared in oil with a little butter and rosemary after the sousvide. What are you thoughts on pairings for this meal? Can't decide between a left bank Bordeaux, Rhone blend or a pinot noir from the US northwest or burgundy.
