Question: Factors that determine skin thickness of grapes other than varieties?
I was reading this Why Washington Merlot Stands Out
Along the lines, a direct quote from the article
"The wind, cold nights and arid climate all play a role in gently stressing the grapes, keeping their skins thick and their flavors concentrated."
This got me thinking and couldn't find the answer through research. What are the factors that actually affect a grape's thickness other than its variety? Phenology must come into play but in what ways?
