Any restaurant somms or beverage directors?

Hey service industry peeps, Im taking over a new wine program and building it from the ground up on this one. How have you framed out steps of service for bottle service in a casual atmosphere? Im trying to have a guid for staff for our opening and not quite sure how to put it into words
